Shrimp and Cauliflower Grits

Ingredients (1 serving):

  • 7 oz shrimp, peeled and deveined
  • 8 oz cauliflower (1 head), chopped
  • 1 cup cauliflower rice
  • 1/4 tsp butter extract
  • 1/4 tsp nutritional yeast
  • 1/2 cup broth of choice
  • Salt and pepper to taste
  • Green onions (optional, for garnish)

Shrimp Seasoning for Shrimp and Cauliflower Grits (7 oz Shrimp)

  • ½ tsp paprika
  • ¼ tsp garlic powder
  • ¼ tsp dried thyme
  • ¼ tsp dried oregano
  • ⅛ tsp cayenne pepper
  • ⅛ tsp ZOE Pink salt
  • Pinch of black pepper

Instructions:

  1. Make the Mashed Cauliflower: Boil the chopped cauliflower in broth until tender. Drain and transfer to a food processor. Add butter extract and blend until smooth.
  2. Air-Fry the Cauliflower Rice: Air fry the cauliflower rice to your desired crispness, then stir into the mashed cauliflower for texture. Add nutritional yeast for a cheesy flavor.
  3. Cook the Shrimp: Toss the shrimp in seasonings. Bake at 400°F for 5-6 minutes, until pink and cooked through.
  4. Serve: Spoon the cauliflower grits into a bowl, top with shrimp, and garnish with green onions or a dash of nutritional yeast. Enjoy!

ZOE Stuffed Strawberries

Ingredients:

  • Large Strawberries
  • ¼ cup cottage cheese
  • ¾ tsp cocoa
  • 1-1.5 tsp stevia

Preparation:

Mousse:

  • Add cottage cheese to food processor
  • Add cocoa powder
  • Add stevia
  • Place lid on food processor and blend ingredients until smooth
  • Pour chocolate mousse mixture into glass and set aside
  • Place in fridge for 30 minutes to set.

Strawberries:

  1. Prepare the strawberries by cutting off tops and coring with a paring knife.
  2. Put mousse into a piping bag and fill strawberries
  3. Serve and Enjoy!
