- 7 oz shrimp, peeled and deveined
- 8 oz cauliflower (1 head), chopped
- 1 cup cauliflower rice
- 1/4 tsp butter extract
- 1/4 tsp nutritional yeast
- 1/2 cup broth of choice
- Salt and pepper to taste
- Green onions (optional, for garnish)
Shrimp Seasoning for Shrimp and Cauliflower Grits (7 oz Shrimp)
- ½ tsp paprika
- ¼ tsp garlic powder
- ¼ tsp dried thyme
- ¼ tsp dried oregano
- ⅛ tsp cayenne pepper
- ⅛ tsp ZOE Pink salt
- Pinch of black pepper
Instructions:
- Make the Mashed Cauliflower: Boil the chopped cauliflower in broth until tender. Drain and transfer to a food processor. Add butter extract and blend until smooth.
- Air-Fry the Cauliflower Rice: Air fry the cauliflower rice to your desired crispness, then stir into the mashed cauliflower for texture. Add nutritional yeast for a cheesy flavor.
- Cook the Shrimp: Toss the shrimp in seasonings. Bake at 400°F for 5-6 minutes, until pink and cooked through.
- Serve: Spoon the cauliflower grits into a bowl, top with shrimp, and garnish with green onions or a dash of nutritional yeast. Enjoy!
