ZOE Strawberry Limeade

Ingredients:

  • Large Strawberries (4 to 5)
  • 1 Lime
  • 2T Apple Cider Vinegar
  • Liquid Stevia or Monk Fruit
  • Water

Preparation:

  1. Slice Strawberries and add to blender with ½ T of water.
  2. Blend.
  3. Strain into pitcher.
  4. Cut fresh lime in half and juice it. Add to pitcher.
  5. Fill pitcher halfway with water.
  6. Add 2T Apple Cider Vinegar.
  7. Add Liquid Stevia or Monk Fruit to your liking.
  8. Add Ice & Stir
  9. Enjoy!

ZOE Stuffed Strawberries

Ingredients:

  • Large Strawberries
  • ¼ cup cottage cheese
  • ¾ tsp cocoa
  • 1-1.5 tsp stevia

Preparation:

Mousse:

  • Add cottage cheese to food processor
  • Add cocoa powder
  • Add stevia
  • Place lid on food processor and blend ingredients until smooth
  • Pour chocolate mousse mixture into glass and set aside
  • Place in fridge for 30 minutes to set.

Strawberries:

  1. Prepare the strawberries by cutting off tops and coring with a paring knife.
  2. Put mousse into a piping bag and fill strawberries
  3. Serve and Enjoy!

ZOE Buffalo Chicken Bites

Ingredients:

  • Boneless Skinless Chicken Breast
  • ¼ c Chicken Bone Broth
  • ZOE Buffalo Sauce Recipe
    • ¼  c water
    • ¼  c Frank’s Hot Sauce
    • 2 Tbsp  Bragg’s Apple Cider Vinegar
    • 1 Tbsp Oregano
    • 2 tsp Paprika 
    • 2 tsp Garlic Powder
    • 2 tsp Chili Powder
    • Pink Salt
    • Pepper

Preparation:

  1. Prepare the Buffalo Sauce by combining all ingredients in a bowl. 
  2. In a separate bowl, combine ¾ of the buffalo sauce mixture with chicken bone broth. Stir.
  3. Cut Boneless Skinless Chicken Breasts into 1.5in bites
  4. Place in Buffalo / Chicken Broth mixture for at 30 min-1 hour
  5. Remove chicken bites from buffalo mixture and place in a single layer inside air fryer. 
  6. Cook at 400 degrees for 10-12 minutes. 
  7. Remove from air fryer and rest chicken for 5-10 minutes. 
  8. With remaining ¼ buffalo sauce, toss chicken bites.
  9. Add Pink Salt for flavor.
  10. Ready to serve.

Cooking Instructions:

Preparation:

  • Heat a sauce pan on med-low heat.
  • In food processor, puree the cottage cheese, vegetable broth, and butter extract until smooth consistency.
  • Remove palmini noodles from bag, strain, and rinse thoroughly.
  • Once pan is heated, add noodles, cottage cheese sauce and seasonings. Stir until combined and heated throughout the dish. 
  • Optional: Add vegetables like spinach, mushrooms, or cherry tomatoes for a little added texture.
  • Ready to serve!
